I live in Seattle and my bf is starting a pizzeria/bar. I am a RN but am taking time off to research for him. We both have some pizza experience, but not a ton. I worked in a pizzeria in NY (upstate) which served semi-thick pizza that was cooked in a pan (midwest style??) when i was 18 yo. The bf is Venezuelan worked at a bunch of domino's when he first got here and then for an Egyptian guy where the bf made the dough and pies then sold them out of a van (random, I know!). He is already a successful bar owner at this point. We will be striving for NY style and he is leaning toward a gas oven. The plan is to offer late night slices, which Seattle seriously lacks. I am at the start of delving into research here and found this sight via Slice/SE. SO....Hello!
