Need for a NY style pizza dough recipe
« on: April 09, 2012, 08:51:42 PM »
We are desperate for that GREAT pizza dough recipe for our WFO. You know the one, thin, elastic feel that does not rise too much. Perfect for that 90 second cook time at 800 degrees. Can anyone recommend....... :pizza:

That's not a New York style pizza.  You're looking for a Neapolitan.  Check the appropriate subforum.

00 flour, 62% hydration, 3% salt is your typical Neapolitan dough.  Personally, I don't normally use quite that much water.
