First attempt at a stuffed crust pizza, plus a question.
« on: March 11, 2012, 03:31:37 PM »
Hi all,

I started making my own calzone and pizza two weeks ago and I'm really enjoying learning and things are going OK so far.

Today I tried to make a stuffed crust pizza and it came out pretty good, but for next time I know to use less topping in the middle and more cheese in the crust, but what I wanted to ask was how to make the bottom more firm/crisp? The bottom is always a little soft, whether I'm making calzone, stuffed crust or regular pizza.

Here's a few photos from my first attempt:

My last couple pies i put a rack on the bottom shelf of the oven, and a rack with stone on third shelf.
I started my pizza on the stone till firmed up, then i moved it to the bottom shelf for 2-3 minutes. Then back to the stone.
The 2-3 minutes in the bottom really made the bottom crust nice and crunchy.
