As a point of clarification, when you say that the dough "lacked extensibility" do you mean that the dough stretched too easily or not enough? Different people use the terms extensibility and elasticity differently, but when I use the term extensible I mean the characteristic of the dough that allows it to stretch without springing back, and the term elastic to mean the characteristic of the dough that causes it to spring back (sometimes referred to as "memory").
