Larry,
I stretched the dough and put it in a pan, added a layer of cheese, a layer of sausage, more cheese, sauce and stuck it in the oven at 475 for about 25 min.  it was pretty good.  the exposed part of the edge was hard as a rock but the rest was good.  never tried a pan before, probably won't again!

baked a few pies last night to commemorate Gene's oven's homecoming! 
man, i love it when the weather cools off.  the pizzas are great, the dough is great and you get to enjoy standing around a hot oven in the cool night.

had another visiting photographer in town for some pizza.  he took some nice photos so I thought I would post a few.  dough was 60.5%, caputo, 1.4% ischia, 24 hrs at 63, 10 hrs at RT in balls.

I have to agree.  I'm normally pretty sensitive to excessive topping quantities, and I think if it were just about any other topping in that much visual abundance, I might have an issue with it, but there seems something spectacular about a lot of sprouts and a lot of pork.

I think if you had added one more sprout or one more piece of pancetta, it might have tipped the scales, but where it is, wow!

thanks scott!  every time I make that one I can see the looks around the table... they all think it's going to suck, but it always wins them over.  just like it did for me at Craig's. 
I usually stick pretty close to tradition but one of the others had zucchini, lemon and homemade sausage with ricotta put on after.  the citrus and sausage is pretty dang good together.  I've been trying to have a little more of a range to work through.

Thanks Craig. I did like it but mainly because of the lemon- sausage - ricotta parts. Def worth a try!

Can you please give some details of the lemon that you add to the pie?  Is it in the form of rind, slices of lemon flesh, or preserved lemon (rind)?
