Greeting, My name is Michael I am new to the forum, I live in Maryland and have been making pizza in home ovens for many years. I am looking to improve my pies with better dough recipes, specifically I prefer Neapolitan style pizzas. To this end I am currently working with a makeshift dry stacked firebrick oven in my backyard that has been insulated below the floor and on roof only. I would appreciate being directed to postings about basic neapolitan dough recipes and experiences with dry stack ovens.
