Great cheese blend

Was doing 50% mozz (half whole/skim), 25% white cheddar, 25% prov and it was pretty tasty.
I went all skim mozz today and no whole milk and BOOM (finally hit a restaurant quality cheese taste i liked).  Only took 18 months of experimenting, HA!

You like skim mozz rather then whole milk? I can't be on your team, skim always browns too much for my liking.

With the cheddar cheese and provolone blend I sure do.  I use the costco part skim mozzarella cheese and get zero browning.
