I'm curious how the foodies being surveyed would fare in a super taster evaluation.  I was surprised about the Asian comment since Asians have a lot more super tasters as a percentage of their population, I've read.

Craig,  as far as beer goes,  yes there is a huge market for balanced,  somewhat bland beer.  But,  once you get into the craft beer segment,  there was a study a year or so ago that concluded the most popular beer style,  over 30 percent was IPA,  the most bitter of all styles.  IPA guys are crazy,  and there are almost none bitter enough.  Happy to be one of them.  -Marc

I also like IPA. Wouldn't you agree that people who get into craft beers are much like foodies? I bet foodies are also more likely to enjoy dark and craft beers than the general population.
I love pigs. They convert vegetables into bacon.

I see the bitter true in foodies too when it comes chocolate. Ever eaten cacoa nibs? That's a bit much for me. I need some sugar.

Of all the tastes, humans are most sensitive to bitterness, and our survival wiring allows us to recognize it in even relatively tiny amounts.  Bitterness balances sweetness and plays a vital role in cutting the richness in a dish.  Chefs use bitterness as a cleansing taste... one that makes you want to take the next bite, and the next.

That's an excerpt from the Flavor Bible that I'm reading right now... makes sense.
