18" New York Style in a wood fired oven

Tonight is my last night in my 20's so I decided what better way to end that chapter of my life then with a ridiculous amount of pizza.  I fired the oven for neapolitan pizza and baked a few, then pushed the fire to the back ,let it burn to coals and the temperature drop and then I cooked my first 18" New York style pizzas.  They were nothing short of incredible, it was an all around great night with the Neapolitans also turning out great, but for a first shot at this style and this size I couldn't be happier with the results.  Excuse the photo quality.  Last photo is a Neapolitan that may be the best pizza I've ever eaten.

Yup I built the door specifically so that I could do an 18" pie.  It was actually more like 17.75", lol.  I even custom made a peel to squeeze into the door.

Another point worth noting I used new Tomatoes today.  Flora Foods DOP San Marzano's my Costco just started carrying.  $8.99 for 3 28oz. cans.  These were the best store bought canned tomatoes I've tried to date for my taste.

I have been doing oven shopping myself, and one criteria is that it HAS to have an 18 inch opening. At the same time I want a low dome for neapolitan etc.    16's just never feel like a real NY to me.    Way to go Jeff!   Time to go find the end of that oven build thread.  Last time I looked it was barely started so its going to be a fun catch up for me.

Wow, those look great!!  I can't imagine launching an 18" pizza and keeping it round!  That seems like quite a trick.  Happy birthday!!
