Quick Question

I don't think I've ever used Pancetta on a pizza before... I found some good looking stuff in the grocery yesterday.... really thin sliced.  Should I cook it before or just let it cook on the pie?

pancetta is great on pizza!  i always render it first so that it only has to crisp in the oven in my 80 sec or so cook time.

Isn't pancetta already good to go out of the package? It's not like sausage where it needs to be cooked. I think it's preference.

Pancetta is raw unsmoked bacon. I usually slice pretty thick and it doesn't get cooked unless it's got a head start before it goes on pizza. If its thin enough it will be fine. I used some tonight on a pie with mushrooms, Calabrian pepper paste and mozzarella - dang good!

It's "raw" in that it's not cooked with heat. It's fully cured though and ready to eat. The Boar's Head I've Been getting lately is anyway.

Bacon is not really raw either for that matter. It typically gets heat and cure. A pork belly would be raw. I don't fault anyone for not wanting to eat pancetta or bacon without further cooking. Bacon, I like crispy. Pancetta, I like warmed and not much more, tough I'm no stranger to applewood smoked bacon straight out of the package...

Yeah thats why I asked the question... It looks like raw bacon.  I ended up rendering it for a few mins and crisping it up on the pie... worked good.  I can see putting straight on the pie though, now that I know its cured.
