Here is a time lapse sequence I made of the activation of my Austrian starter - 148 minutes of elapsed time condensed into 10 seconds. About half-way through you can see the starter reach its peak and collapse back down.

Cool video Bill.   In the video, it looks like it rises again after the fall.  Is that typical?

Yes, but much slower. BTW, I made a mistake in calculating the lapsed time. It was actually 148 minutes. I have fixed the original post.

I bet what you're seeing is the result of microorganisms other than the yeast taking over the ratio in the culture. Perhaps a lactobacillus. Just a hypothesis though....
