I'm thinking about how to avoid cool down the moment the pizza is served. So can you advise for that reason wooden dishes?

I don't think the Health Dept. is going to like wooden dishes.
One of the local pizza places here serves the pizzas on a round tray that has dime size bumps on the bottom, Kinda like a waffle iron.

You could serve the pizza on a heated stone, much like Pizza Hut toyed with many years ago. This is very effective, just remember the old admonishment "Be careful, this is very hot!".
