Resources on bread basics

I really want to understand the science behind bread making (and food science in general).  Do any of you have any recommendations in terms of books, websites, etc?  I do search these boards and I have found a lot of great info.  I want to nail down my ABCs in terms of basic understanding.

Thoughts, suggestions?
