After my pizza turned out dry which I posted in the Neapolitan section, I decided to use my next batch of dough for a calzone. I filled it with feta, mozz, ricotta, pepperoni, onions and mushrooms. It turned out good, but the ricotta was way to bland. I ended up reheating it the next day and breaking it in half and spicing up the ricotta that was in there with some dried herbs and salt. It was MUCH better. I also removed the onions, they were soggy even though I seared them before going in. Maybe I'll go raw next time with them.
