I am building a new home with a deck in back off of the kitchen and hopefully will be incorporating a WFO off of the deck (composite, not real wood). I have been in contact with a pizza oven installer who strongly recommends the Pavesi P90. My hope is to use the oven for pizza of course but also for everything from a whole turkey to just about anything which might otherwise go into the oven. Also, I was told that this particular oven could be outfitted with an under-mount style burners mounted vertically below the oven with only the tip of the burner penetrating through the cooking floor. This could be used in place of wood or simply to get the wood started quickly and easily. Does anyone have any thoughts/experience with these?
