If the chef absconded with intellectual and/or real property of the bakery, shame on him. If the notebooks he took were the only copies of valuable recipes, then shame on the owner for not having backup copies offsite in case of theft, fire, etc.

Seems pretty black and white to me. I hope that Chef never gets work anywhere else.
