I've gone back to plastic tupperware type containers for dough balls and I'm much more pleased with the results over baggies. For some strange reason the baggies were allowing the dough balls to overferment even in the fridge. I can now monitor the containers and place them back in the fridge from time to time if not used right away. Last night's crusts were some of the best ever so far and opening was a breeze for me.
