Quick update for anyone following along here.

The last month has been a steep learning curve. Like pizza, making pasta in any volume presents unexpected challenges. Granted a couple hundred pounds a week still isn't huge volume, but it's much different than the 40-50 we'd been doing previously! I might dare say we are getting better at doing it too.  ::)

I will say the response has been phenomenal overall, and very humbling. Food has brought people together since the beginning and to take part in that on any scale is really cool.

Looking forward to when I can share it with all of you-hopefully later this summer.

Hey Jeff, thanks for asking. This is the best below minimum wage job I've ever had!  :-D

Things have been pretty crazy. Over the summer we donated lots of meals and also gave 1000lbs of food to a food pantry in Chicago. I call it eat pasta, help a kid. We hope to be able to do the same over the holidays.

We had equipment issues that had us out of commission for awhile and still somewhat limits our production. The holiday season has exceeded our sales forecasts, which is great, but also a little scary because of that.

My wife Marie helps out much more now too...you can imagine the ups and downs of that.  :angel:

I had a meeting w a potential investor where we could have really upgraded and added all sorts of equipment to increase production to 1000-1500lbs per week. We couldn't agree on terms, so no deal.

Today I got an email from a well known National food magazine asking for some samples. They may want to do something on us.

All that being said I will probably get a day job later this winter or this spring. The company is still quite a ways off from being able to financially support us. I'm fine w that. We plan to keep doing our thing and see what happens.

Just keep doing your thing ! The pasta is great !I have enjoyed it !! I  Love the fact you didnt let them just make the deal for their benfit. Its a passion for you also, and what it will be it will be. Slow and steady winds the race !

Man, I'd love for you to be able to do this full time and really do well, it's KILLER pasta.

I am making some Wednesday as part of a gift for my Mom and Dad.  My wife and I tend to give more food gifts than anything and this year we bought my folks a 1oz white truffle which is arriving today.  I want to eat is asap so we're going to make a pasta dish (not sure what yet) and include a TON of shaved truffle.

The fusilli giganti is such a cool and fun shape.  Talk about mouth feel!  Tonights dinner was awesome, super simple with the pasta being a great vehicle for the truffle.  Good times!
