What an amazing gift! And that Barolo must have been spectacular. I have always wanted to buy a white truffle and have it shipped for a special meal. When I was in Bologna, we had a meal that was all white truffle since they were in season. One of the pasta was very similar to what you did.

Jeff, WHAT THE......I go to your site to finally order some of your pasta and you're out of the Fusilli!!! That's the kind my wife is fond of too

BUT, I did order 3 each of the others and look forward to trying them out after such good reviews from all the others. Mind you, I have a pretty high standard for pasta as I make my own scratch fresh pasta at home all the time

Seriously though, my apologies. Sometimes we do run out of stuff, but that's just because I don't have a warehouse full of pasta because of the time it takes to produce. 2-3 days for some of these bigger shapes. Even though it's dry and has a one year shelf life your pasta was just made 1-2 weeks ago which along with how we make it makes a big difference IMO. When you get it open it up and give it a smell and tell me when the last time you could smell the grain in a dry pasta? I really hope you like it-Let me know!

Yes.Fingers crossed for this summer. To dry long pasta the way I want to usually requires that it hangs from something rather than lay in trays like short shapes. That usually means new equipment. In my spare time (

) I've been trying nested pappardelle and linguine to overcome that. They still take double or triple the space of other shapes though.

The drying of pasta makes it so much more difficult than fresh.

Jeff, received my order today. VERY prompt service and the olive oil was a big surprise, THANK YOU very much. I will be trying tonite or tomorrow. I have to go to work for a couple hours in the evening for education junk and may not get a chance tonite. Any special cooking instructions other than into boiling salted water and drain when just before al dente and toss with the sauce like I always have??

Thanks again...and the olive oil tastes great, already been dippin' some bread into that

Jeff,

The prompt service, great looking product, and thoughtful gift of EVOO as well as the handwritten note all have me very impressed!

The product inside the bags is obviously important in the long run, but I think it goes without saying that we all know it will be GREAT! I can't wait to try it.

Just AWESOME!!! Drained at about exactly 8 minutes and back into a pan with some tomatoes sauce, slivered onions, garlic, ham and mushrooms. Added a little pasta water back and tightened up to finish with a 50/50 mix of fine grated parm and double Gloucester cheese, Perfect density throughout the pasta. It is pictured with the lumache style. I'm glad I bought 9 bags and will certainly order more. My wife Rosie loved it too and both agree it's some off the best we've ever tried and unfortunately.....you may have an edge on my own scratch homemade pasta which WAS the best
