As I'm typing this it occurred to me maybe it's as simple as cooking further away from the fire? Any ideas?
The pizza look great, definitely getting there.
You said it, cook further away from the fire and use the entire width of the oven to make the most of the flame.
The low dome of he FGM creates the nice flame rolling across the dome.
I think someone copied that and even patented it to call it their own creation
Anyhow as you get better acquainted with the oven and the flames you will be able to place the pizza to make the best of it.
Dang thing catches on fire all the time.
I personally use a wooden peel but I made it out of maple. The very close grain of the maple makes it more moisture resistant and it has never caught on fire so far.
