Greetings.     My name is Mark and I'm from NJ.  I thought I was an old hat making pizza until I randomly came across this forum today.     I'm really looking to perfect the art of the perfect thin crust pizza.   Something I've failed at for the past 5 years of attempts.

I can't speak for Trenton pies, which I believe might have longer bakes and/or double bakes, but for Northern NJ pizza, I failed for 2 decades until I dialed in the right oven setup/bake time.
