Hummus Pizza Pie....AWESOME!!!!

So I had some leftover edamame hummus I made last weekend I had to use up and thought, "why not on a pie". I made it for the PICU at work last nite and it disappeared like a magic trick! Best served room temp, I don't think anyone nuked it. I used Steve's quick and easy NY style recipe and topped with the hummus, marinated artichokes, black olives, onion and gr pepper, feta and mozz, and diced tomatoes to finish the top with a sprinkling of parm. Didn't even miss the meat, honestly would have probably took away from it. Hands down, one of the top 5 pies I've made. Also did a sprinkling of pizza spices on top before it hit the 500 degree stone. This one will be a frequent repeat. Really, if you like feta and hummus you have to try this one on, my wife doesn't care for feta but on this she really liked it. If you try it let me know your thoughts.

Was the hummus all edamame, or did it have chick peas too?

ACTUALLY.....now that you ask it was a edamame butter bean mix, only because butter beans are like the best bean there is ;-). Mind you I haven't met a bean I don't like but butter beans......I could just about live on butter bean sammiches, butter beans and rice, butter beans and potatoes, butter beans and butter beans, feel like a Forest Gump session here... just love'em!!

Did you cook the hummus on the pie, and serve hot, or spread the hummus after you baked the crust??

I also made a hummus and Feta  cheese dressing with other ingredients at Reply 18 http://www.pizzamaking.com/forum/index.php/topic,10703.msg95354.html#msg95354  I really liked that pie.  I might go back to a hummus and Feta cheese after your post.  I forgot how good hummus was on a pie.  I cheated and didn’t make my hummus though.

Thanks for reminding me to try hummus again!  ;D

I was going to par bake then changed my mind. Used the hummus as a base and built it like normal. Very good!! And no, served at room temp, no one chose to heat it up, didn't miss it.

Ooooooh, yes, love that one, or butter beans and bacon, or dirty beans and rice!! Haven't had slowwww cooked hocks or shanks for some time, may have to do that one soon!

I used this from the food network site and ebelished it a bit. Cooking the edamame is needed to soften them or it will be kind of coarse/gritty. Also added butter beans of course and a bit of habanero, jalapeno would do too to jack it up a bit! Tonite I'm making some moree with some avacado added. Fun stuff to play with.

Ingredients

    1/2 pound frozen shelled edamame (green soy beans), about 1 1/2 cups
    1/4 cup tahini
    1/4 cup water (I used the liquid from the butter beans)
    1/2 teaspoon freshly grated lemon zest (I used lime)
    1 lemon (about 3 tablespoons), juiced (lime again)
    1 clove garlic, smashed
    3/4 teaspooon kosher salt
    1/2 teaspoon ground cumin
    1/4 teaspoon ground coriander
    3 tablespoons extra-virgin olive oil....also used some of that fake butter spray in it, 3-4T
    1 tablespoon chopped fresh flat-leaf parsley (I used cilantro)
    Suggested serving: Sliced cucumbers, celery, and olives, pita wedges, toasted baguette rounds, pizza topping, sandwich spread........

Directions

Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.

In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until smooth. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.

Transfer to a small bowl, stir in the parsley and drizzle with remaining oil. Serve with the suggested vegetables, or refrigerate, covered, up to 1 day.

Per Tablespoon (recipe yields 20 tbsp)

Calories: 52

Total Fat: 4 grams

Saturated Fat: 0.5 grams

Protein: 2 grams

Total carbohydrates: 2 grams

Sugar: 0 grams

Fiber: 1 gram

Cholesterol: 0 milligrams

Sodium: 80 milligrams

Thanks for the recipe.  It looks amazing.  One stupid question: Do you blend the butter beans in the food processor too, or just the edamame?

Yes, all blended up. Doing some right now. Nuked the edamame til more tender and blend those with some butter bean juice, fake butter stuff and olive oil til nice and creamy then start adding the other stuff. Now to the other stuff :-D

I used a 12 oz pack of edamame (already shelled), 2 cans of butter beans and 2 avocados. Adjust other ingredients to compensate and to taste. This time instead of the cumin I used some Tone's Taco Seasoning. Came out great! Just taste tested it with my wife and my daughter who stopped by. A HIT!
