As far as quarry tiles go, would these be ok? They are unglazed.

I know there are some folks saying that it's better to go with a stone made for cooking, but I'm really just interested in seeing if the tiles in the link would suffice for someone going the cheap route. Thanks guys.

Those would definitely work... for the hearth.
For the ceiling, you want something darker, because darker colors have better emissivity.
From the photo, it looks like these are a darker shade:
