New seeker of the perfect pie

Hi:

Just want to introduce myself. After getting pretty good at baking no-knead bread using Jim Leahy's recipes, I tried my hand at his original recipe no-knead pizza dough. As good as the breads were, the pizza dough turned out to be pretty lame. So I started searching the net for people who were interested in and good at making pizza, and came across this forum. Wow!

Thanks. I've been on the forum for a while as a guest, and you're absolutely right. So much high quality information and so many good people willing to share their knowledge and passion for pizza.

New Haven is on my bucket list of pizza mecca's to try. 

Please post your own experiences with your local pizzarias making the NH style - with pics and as much info as you can legally gather!  Dumpster diving - its not just for hungry bums, it's also for pizza fanatics across the world who want to know DETAILS.  Dough, sauce, cheese, any notes on prep and baking you can gather...  consider yourself commissioned as a spy.

OK, as soon as I buy the hazmat suit! I have to admit that I prefer Modern to Pepe's or Sally's (we had a few experiences at those two that I refer to as flamethrower pizza... scorched beyond the point of eating) in New Haven. Our favorite place is in Branford, CT (around 10 miles up 91N). It is called Marco Pizzeria and is owned by a great guy named Tom Andrew, who spent many years at either Pepe's or Sally's (can't remember which). That's where my whole picked up our white margherita addiction. As my 11 year old son always says when we have pizza anywhere else... not bad, but it's not Marco's!

The new Pepe's locations seem to be cooking them less than New Haven.   I was in Danbury last week and actually heard the manager tell the employee working the oven that the pizza he took out was too well done.  It wasn't anything like some of the ones I have seen in New Haven.

I'll have to try Marco's next time I'm down in Branford.
