Pizzera bianco or mozza in ca

Not much chatter about the 2 great spots bianco or mozza ??  Just curious why they don't get the respect on here. I think those pies are great contemporary Neapolitan pies some of the best out there.   I know that bianco was first and nancy built mozza's dough to replica biancos dough.  Any pointers or methods that anyone one can share to get a pie like that

I don't think Nancy was trying to copy Chris. They are hardly similar, and neither is Neapolitan.

Use the search feature. You can find plenty on both.

Maybe not copy but it's in print that's it was the inspiration for mozza dough

Some sort of hybrids. I can see some comparison with Bianco, but Mozza is not even close, IMHO.

I agree with Craig.  Bianco is closer to Neapolitan with a shorter bake time and higher oven temp.  He gets a ton of respect here, I believe.  I am a huge fan.  However, there is nothing Neapolitan about Mozza and Nancy S. is the first one to admit that (very long bake times and lower temp oven), but they have a huge following which is very respectable especially here in SoCal.  I have eaten their pies a few times and it's just not for me especially if you consider what you get for the price.

Have not been to mozza, but biancos is a 2 plus minute bake and very good, different than neapolitan

I feel bad saying this, but Mozza was the biggest disappointment I have ever had at a destination pizzeria.   Bianco's on the other hand was totally worth the six hour drive I made to try it. I think the reason mozza has good reviews is that it is in one of the worst citys for pizza.   LA is filled with horrible pizzerias.    Even the best of the best there is just average, and would have gone out of business if it were in the NY,NJ, or CT.     I haven't tried the LA places that have popped up in the past three years, though, so maybe there is finally some good pizza in that town.

Scott- It still has terrible pizza for how big of a city it is. It is really quite ridiculous. Now the sushi on the hand, no other city can keep up with LA on that front.

im with you on that one.  Best sushi I have ever had for sure.   still havent found mexican food like than any where else either.     Every place seems to have their own style of mexican, and for whatever reason LA/San Diago is it for me.
