Great Value Dough Mix
« on: May 17, 2012, 06:52:44 PM »
I occasionally use the pizza crust mix from walmart. The package says to grease the pan, and I use olive oil.The edge of the pie comes out nice and crispy, but the rest is soft.

I tried taking the pie off the pan to crisp it up right on the oven rack, but it didn't work to much.

What can I do make it crispy?

A pizza crust mix?  :'(

I use a Lodge 14-inch cast iron pizza pan and I've gotten even crispness every time on everything I've baked on it.  A pizza stone would also be a better choice, though I'm not sure that's an option with a mix.

You should consider trying a partial bake. Cook the stretched dough without toppings for about 4 minutes.

Remove the dough from the oven and flip it over, with the cooked side on top.  Now you can add your toppings.  Continue baking until it's finished.
