Best onion? Not really an onion... My favorites are shallots.

I make a veggie pizza that is just (mozz) cheese with veggies. Sliced tomatoes, bell peppers (red and green) sliced in semi-thin slivers, and finely sliced onions.

Shallots work best on this pie, but red onions will work if you can't find shallots.

Shallots add a distinctive "something extra" flavor that melds really well with the bell peppers.

How the hell do you know so much about onions?? 

But, like some others, I got to say that all those sweet onions, like Vidalias, are, to me, best eaten raw.  In fact, when I cook them, they become seriously mushad.  Even in onion rings...no good.  We batter fried Vidalias vs Yellow spanish onions....no contest.  Not a single person preferred the vidalias.  ANd when I did the test, I was sure vidalias were gonna kick butt.  But no.  Raw, they are terrific, cooked not so much.

But, I've got a question...why do I read everywhere that red onions are milder than yellow?  Thats simply not true.  We cut hundreds of lbs of each every single week and that is NEVER the case.  The reds have a much bigger bite.....BUT, I constantly read that they are milder....any idea??

I generally prefer sweet onions, but yellow Spanish onions and even red onions. I think the key thing is having them sliced evenly when I worked in an Italian restaurant. They would put him on a slicer and cut up the pan of them for that day/evening the thickness depends on the temperature your cooking them in and whether or not they are on top of the pie. The way I like them.

I gotta say that ANY onion sold as a "SWEET" onion, such as texas, vidalia, etc, i only use raw.  I've found that when they are cooked, the texture is inferior to regular yellow onions and you lose that sweet taste....since all onions are sweet as they caramelize.  I love the mellow sweetness of vidalias.....but i can only appreciate it when i eat them raw.

Sweet red onions from my local farmers market. I gotta go tommorrow and get some more for pies. ;D

Just picked up a 10# bag vidallias yesterday.  Last night fried up two small ones with five garlic cloves, put on a left over dough and made a white pie.  Dusted with tomatoe powder and a little sea salt, opened a bottle of pinot grigio, and the wife and I sat on the deck and watched the rabbits running around!  Was a great night!  unfortunatley no pictures :(

I buy whatever is in season and local at the farmer's market here in San Antonio.  We have gotten some great onions this year so far.

Regular red onions.

 ^^^ I cut em super thin and the just melt into the pizza. red onion and a good sausage or bacon...  :drool:

When I can get them, I love Vidalia onions, Walla Walla Sweets, or Maui Onions.

Also, the best sweet onion are the flat shaped ones.

No never tried cheese, I coat with sriracha  sauce before wrapping with bacon, then top with a little of my spice rub and smoke at 275 for about an hour and a half till the bacon is crisp
