Pizza Night!

We had to bump our weekly pizza night up to Thursday because the inlaws are coming to town this weekend and we have reservations for dinner tonight...  I finally remembered to get some pics before we ate.
the dough consists of
~3.5 cups generic organic flour
~1.75 cups water
1 packet instant dry yeast
a good amount of salt and a bit of Olive Oil

topped with roasted green peppers, onions, corn and garlic, summer flavors.
Diced tomatoes(normally we go with crushed san marzano's but i didn't do the shopping this week...)
crumbled fresh mozz.
cooked in an electric oven at 550, preheated for an hour or so, for about 5 minutes the stone on the second to top rack, then at the 5 minute mark, switched it over to high broil for a few minutes to finish it off and give the top some nice color.

Pretty psyched on the pies lately.

Thanks for the kind words.  My wife and I are hooked on the veggie pies lately.  Everything freshly roasted while the stone is heating up, can't go wrong!

Had some leftover pulled chicken in the fridge, cut some 6 in 1 50/50 with some Stubbs BBQ sauce and added some fresh mozz.  Was a success.
Pie #2 is the Sicilian I've been messing with.  It's a little to airy, but better than overly dense.  Just some tomatoes, fresh mozz and a roasted red pepper on there.

The chili pie was awesome.  No hot sauce on, just straight tomatoes and the chili, I also cut up the remainder of the chili pepper we had and sprinkled a bit over the pie to give it a little more heat.

Local fresh mozz is all we use, pick it up at the farmers market every weekend.

A veggie Pie and some Pinwheels.  We always start the night with some garlic pinwheels.

Aside from the pizza, the garlic pinwheels are the best part about pizza night.  half roasted garlic half not, a handful of scallions, some park and mozz...
