Thanks to all who served this greatcountry. I Had 12 left from Friday gig baked em today in Earthstone, This dough was made on Wed evening , 10 Hour bulk then ball and fridge, Little tough to work with the humidity and the warm day but got her done. I did like the flavor of the 4 day dough ! I had a Friend over from Sicily and he raved about the Hotdog Pizza he remembered from Sicily Has a name but forgot it. actually hot dog and ham but had no ham

so I did one up for him, and few of the other same cast of charactors. Its hamburgers tomorrow !

Oh and this was Friday nights dinner all leftovers from the Party just bought some Broccoli. Rest. Depot now sells fresh Pasta ! from Italy. they sell about 5 different cuts I was very impressed great mouth feel and chew! This is the oriechetti and I Used up left over sauteed garlic Olive oil Sausage and Broccoli Yummy !!

Thanks John. I did 3 of my years in Jersey. That's when my Pizza Making endeavors started 18 years ago. Today however have enough dough ready for 8 pizzas in the piccolo.

Looks good John. I recently saw one of your films on Youtube, and loved your slap technique. Fast, and very elegant. I've got to learn the slap that way.

Um now the July 4th leftovers here:) I would like to thank Denise, who did not want to run out so I brought 50 dough balls! pushed the last 5 on people and walked out with 10 ! and all the goodies to top Sooo. to the earthstone batman ! Man I miss this oven !
5 1/2 day old dough soft and nice !
