Today's pizza pictures

I made this pizza today using  “Molino Grassi”  type 00 Italian flour, “Pomito” tomatoes and fresh “Galbani” mozzarella. The dough was made pretty much according to Chau's "basic easy to remember NY Style dough recipe" which you can find here http://www.pizzamaking.com/forum/index.php/topic,10789.0.html  Once again, a big thank you to Chau for this recipe. My hydration level was approx. 65%. I made this pizza in my home oven which is quite far from being perfect. It does not have a bottom heating element and reaches the maximum temperature of 250 ºC = 482 ºF only. Nevertheless, this is the only oven I have for the time being, so I will be experimenting different things with it to get better results.

That looks great!. I love it when folks get such good results under less than optimum conditions, such as a fairly cool oven. :chef:

Your pie looks amazing.  That's the kind of pie that has you wanting to make some straight away.  I had some pie in NYC on tuesday.  They make a pizza like yours, which is what I should have ordered.  Their plain slice usually blows me away, but it was terrible.  Too greasy and overly spiced; like a Pennsylvania imitation of New York pie.  I was somewhat ticked since my wife didn't care for it, and I paid extra for a sausage piece that my daughter wasn't interested in either.  Your pie would have definitely won in a taste test.

 Thanks a lot. It's a real compliment to me you saying that in NYC they make a pizza like mine. I love pizza in NYC. Too bad that your recent experience was not so fortunate. Actually NYC is the place where I first tried the real pizza (in 1989 as far as I remember) and since then I got addicted to pizza. I look forward going to Chicago some day and trying their deep dish pizza. I've never tasted it, though it looks so appetizing on the pictures I've seen.
