Thanks Bob. Hoping my pies get better with some reading on here. I just ordered some Caputo flour and central milling panissimo 00. I don't have a brick oven but I can get my ceramic really hot and my weber kettle. My biggest problem is stretching dough. Either to wet or it pulls back when I stretch after adding more flour.

Sounds good J..good luck with the 00 flours. Please be sure an put up some pics, OK?
Try a few stretch and folds with the too wet dough rather than adding flour...that will tighten it up for you.
