Hello all,
First of all I want to thank all of you for the great forum and the truely amazing amount of inspiration. My wife and I are in the process of starting a mobile wood fired pizza operation in Salem, Oregon. We have completed construction of our fully licensed and health department inspected prep kitchen and are finalizing the order of our mobile oven. Together we have very little experience operating a wood fired oven, but are looking very much forward to the learning experience. We hope to be fully operational late this fall or early next spring. I have been lurking in the shadows of this forum for over a year now and have learned a considerable amount of information from the members here, but I know nothing will take the place of the hands on experience I will obtain once our oven arrives.
