Jumping in with both feet
« on: June 05, 2012, 05:00:16 PM »
Hello all,

First of all I want to thank all of you for the great forum and the truely amazing amount of inspiration. My wife and I are in the process of starting a mobile wood fired pizza operation in Salem, Oregon. We have completed construction of our fully licensed and health department inspected prep kitchen and are finalizing the order of our mobile oven. Together we have very little experience operating a wood fired oven, but are looking very much forward to the learning experience. We  hope to be fully operational late this fall or early next spring. I have been lurking in the shadows of this forum for over a year now and have learned a considerable amount of information from the members here, but I know nothing will take the place of the hands on experience I will obtain once our oven arrives. Again I want to thank all of you who participate in this forum.... Ray

Awesome! You're going to do great!
Have fun.  And don't worry - the pizza mistakes still taste good.  (I should know - it's the only kind of pizza I've made so far  :-D)

Thanks for the words of encouragement Joshua, I have to admit I'm very nervous, but like you said even the mistakes will be good, and i have an endless supply of people who say they are willing to eat all the mistakes while I practice  :-D
