Finally got a hold of a couple of bags of KA high gluten flour and made a couple of beauties tonight. †The one I was going to photograph got eaten.
The Samís bread flour is going in the trash. †I must say though when Samís sold the Bakerís & Chefs high gluten flour it was pretty good.
Ran a side by side taste test tonight between Poly-O and Samís pre-shredded mozzarella. I preferred the poly-o slightly but I thought the Samís would pull a mighty long strand of melted cheese.
