I finally remembered my camera yesterday, not a great photo, but fairly representitive of my pies. Pepperoni is my best seller but a close second is ham and pineapple.

That's exactly what I thought when I first saw the picture. I only wish that I could get pizza like that close to me. Then again, if that were the case, I probably would have never started making my own.

Thanks everyone for the kind words. Paul, I'm running the oven at 320C. um, close to 610F. for a bake time of about 6 minutes. As far as I know by watching the other places in town I'm the only one hand tossing, everyone one else uses a roller.

That is a good looking pizza. I like the way that you organized the slices of pepperoni--not haphazardly tossed onto the pizza.

Was there anything that you had to do to a basic NY style pizza as we know it in the States to meet the tastes of your Mexican clientele?

What do you use for cheese don? Is it mozzerella? I think I remember you saying you used some other types of cheese
