The correct toppings for Clams Casino pizza?
« on: June 12, 2012, 04:39:32 PM »
Please tell me if I am on the right track here for Clams Casino pizza.

Ricotta cheese
Clams (canned)
Minced garlic
Crumbled bacon
Diced tomato
Olive Oil
Parsley

Some people I ask say no Ricotta some say Ricotta and one person said green bell pepper. I don't recall green bell in clams casino.

Any advice would be great

I don't think there is a right or wrong track. Ask 10 people how to make clams casino, and you'll probably get 10 different answers. As long as you have clams and bacon, you're OK. Your ingredients look fine if that is what you like. I don't think tomatoes are commonly used. You could go either way on the bell peppers - red or green would both be OK. I personally would not use ricotta or any other heavy sort of cheese.

If it was me, I would top it like this:

Parmesan
Fresh clams (I just can't do the canned clams any more)
Minced garlic
Olive oil
Black pepper
Onions lightly sauteed in butter, Worcestershire, and Tabasco (maybe)
Bacon (I cut the raw slices into 1" strips or so) par-cook as needed
Chopped flat leaf parsley, post bake

Craig
I love pigs. They convert vegetables into bacon.

I'm with Craig on this one.

IMO one area where you can't be creative is the use of fresh clams-it's a must.

Canned chopped clams are rubbery, mealy, salty and have no clam taste.  Canned whole baby clams are often gritty with limited clam flavor.  If you cannot get fresh clams, whole frozen clams would be the next best choice. It would be a shame to go to this effort to make clams casino that don't have a good clam flavor.

Here is a site with a recipe for clam casino pizza.
http://www.howsweeteats.com/2011/06/clams-casino-pizza/

My brother-in-law a French chef, loved it. Used my own dough version.  I use either minced or chopped clams.
It's a hit with everybody that has tried it.
