Last Nights Glutenboy's Pizza

I cooked this Glutenboy's pizza on a 1/2" steel plate for 5.5 minutes (3 minutes convection bake/2.5 minutes broil).  The toppings were mozzarella, romano, pepperoni, linguica, Italian sausage, and olive oil garlic marinated purple onions.  It was very tasty!

I haven't checked the actual temperature of the 1/2" steel plate with an infrared thermometer.  The plate is located about 5" from the top of the oven, and I preheat the oven at 530 degrees for 1.5 hours prior to baking.  When I switch to broil, I use the high setting.  The Glutenboy's dough that I used for this pizza rested in the refrigerator for 7 days.  I took it out of the refrigerator 2 hours prior to baking.
