Anybody using garlic scapes?

I have a bunch of garlic scapes, and am wondering if anyone has used them as a topping. My wife is threatening to turn them into pesto, which I could use on a pizza, too (if she doesn't claim them for pasta).

I haven’t tried it yet, but Steve’s friend Bob make a delicious Aioli (Garlic Sauce) that he puts into a plastic squeeze container and then makes circles on the pie after it is baked.  I think I can find a link to a picture of some of the Aioli added to a pizza if you want me to find it.  I think he uses crushed garlic and virgin olive oil, lemon juice. basil and a couple of other ingredients.  If someone finds a good Aioli Sauce recipe for pizza I also would be interested in trying it.  Bob said he doesn’t have exact measurements or ingredients he uses.  His does change from time to time what he uses, but it is always delicious on pizza.

Craig & Marc: I was waiting for someone to ask what scrapes are. Instead, I had to Google ramps. So... how would you use ramps as a topping?

Sautee them in butter and chop them up.

With tomato sauce and pecorino maybe? Or on a white pie with mushrooms? Sausage on either if you want meat?

I think I'll go the sauté (in EVOO... more my style) and put them on part of a white pie with cherry tomatoes and basil. I'm also going to try some sautéed kale on a pie. I don't eat meat (  will you still reply to my posts?)

Did the deed tonight. The sauteed (in EVOO) garlic scapes were absolutely fantastic. It brought out some sweetness in the garlic flavor that was magnificent on a white pie with cherry tomatoes and basil. I was less impressed by the Calabro mozz that I tried - pretty bland. Gotta find more scapes!
