I agree with John kwm. If you can find a local mobile wfo that would let you work with them, it would be the best experience available. A year ago I spoke with Joseph Pergolizzi in depth about his workshops, the business, ovens, etc...A great guy btw. I began making arrangements to attend the workshop. But as I researched our local laws and requirements from the health dept and other gov agencies, I found myself with a business license, a lease with a kitchen and all the necessary paperwork. Once the legal stuff was out of the way, I started building an oven. Before I knew it, we were picking up catering gigs and well.......I didn't make it to Boulder.
I'm certain the FWI workshops are great and they answer most of the questions you could have, but you will still need to do the footwork with your local health dept and other agencies for the required licenses.
