Why not crispy? I'm not really a fan of thin and crispy pizzas, I prefer thin and I can't think of a word to describe the texture lol.

The article does mention the pizzas placed into a pan, I imagine the pan is placed into the oven then, probably needed to enable less training for the pizza makers.

Scott, I don't buy the pan story either. I know the website is for show but it clearly shows the skin being dressed on a peel.

clearly again the skins are on peels not pans. Someone slipped up somewhere.

Wonder how long they'll offer a $5 pie....wish they had this concept near me, come to think of it, I wish they had anything near me.

People like pizza, and people like their food to be fast lol. I'd definitely hop into one of these shops for a late afternoon snack or some such thing. Although in my area there's plenty of fast food pizza carts to go around.

PizzaRev in Northridge is already doing this and will soon have several locations. They use a Roman thin/cracker crust.  The dough is cold proofed for a day and they use Pendleton Power Flour. You can dress the pizza any way you like and it always costs $7.45.

800 Degrees Pizza, which also uses the Subway sandwich style assembly line for real Neapolitan pizza, is owned by the Umami Burger people and they have plans to open numerous places in CA.

It sounds good but Roman thin/cracker crust does not a Neapolitan make.

800 Degrees Pizza is authentic Neapolitan: http://www.800degreespizza.com.  PizzaRev is the Roman crust.  Sorry if I wasn't clear about that.

You betcha. They're both very good. I'm not a big fan of the "soupy in the middle" Neapolitan bake of 800 Degrees, but the crust is tasty.  The crust at PizzaRev is essentially without taste, so it's purely the toppings that make that place

Guess maybe they should have added a couple more hundred degrees to their name an their oven...
Jus don't make much sense...they want to do fast assembly line as you watch pizza yet pull up just short of the finish line.Hmmm....they'll prolly keep the name and soon up the temp. Maybe not...most people don't know what they're eating anyway. Specially in Cali, right!!

It seems to me that the soupy in the middle problem is caused by too much sauce. I've had some crispy and spongy pizzas, I like them better than soupy ones.
