I saw you guys mentioning trichinella spiralis and wanted to chime in. From the years 1997-2001 there were 8 cases of trichinalis reported from people eating meat produced in the United States. The chance of getting it is beyond low in the U.S. so I say put that meat on the pizza raw! But I totally see the basis of doing it for removing some fat for health reasons and to get a little more browning just as long as you don't cook that porky goodness all the way through! Haha.
P.S. - 53% of the reported cases from the CDC between those years was from wild game meat, namely bear and cougar.... LOL, I thought that was hilarious. Bear and cougar meat.
