It was at the top of the hill about 1/4 mile from the lake (right where Pinewild Project LP is).  There was a nice curvy dirt road, downhill all the way from the house.  We kept a ski boat and a couple of john boats for fishing.  Us kids (3 brothers and a sister) spent so much time down there that Dad ran a phone line to the pier (which is still there) with a loud ringer.  That lake was full of bass and we were the only ones that fished it.  I caught a lot of fat sows on fly there, 7-8 pounders.  The only thing that sucked about living there was the 2-1/2 dirt driveway from Linden road where the school bus dropped us off to the house. Pinewild drive looks to be about it, although much straighter (It used to cross all three streams that fed the lake).  We also used to jump trains from there into town; the track was so old they would only let them do about 10 MPH.
Sounds like a great way to grow up Tom. We were boating people too...wonderful memories. I had the same sibling count as you.....I feel sorry for your sister.  Ha!    >:D

Me too, but she turned out all right.  I was a privileged (but not wealthy) kid.  I got to live all over from Alaska to Florida, and do things from an early age that many have to wait until they retire to do.  Thanks Mom and Dad!

OK, one more story from NC, and then we get back to bacon.  My Dad was a lifelong bass fisherman.  We were out on the lake, I mean Blue Pond, in a johnboat, me paddling along the bank, him fishing with his Abu Garcia Red reel and a Devils Toothpick.  He hooked and caught a monster, at least 12 pounds probably more, but by far the biggest he had ever caught.  He put it on one of those snap swivel type stringers, cracked a Miller Pony, and that big ol' sow made one swirl and she was GONE!  Bent that stringer open and never looked back!  Pops threw his beer in the lake, his rod in the lake, his tackle box in the lake, and I jumped in and swam for shore!

Last time he ever fished for bass.

No substitute for a line through the mouth. No getting off of that.

Here is a bacon taco to get things back on track.

Nope that works, although I have lost a mess of fish I stringed up and left in the water to turtles.  So, back to bacon.  I hate kingfish.  I like catching them, hate cleaning them and unless they are cooked ASAP they are worse than fish-sticks.  Here is my kingfish recipe:

Cut slits  vertically on the kingfish flank about 2 inches apart, and push out chunks of flesh about 2"x2".  marinate them with mustard, Worcestershire, and, if you are brave, some powdered wasabi.  Wrap each chunk with bacon and grill.  Now that is some good eating.

I make the balls too but simply roll them in mustard then bread crumbs and deep fry. They are actually pretty good that way, but as you said, you have to cook them ASAP.

Yeah, that is how I do them when I have to make a lot of them.  They are worthy of the name done like that, but they are still slimey $$%^&s.

Edit-speaking as a deckhand who had to clean thousands of them.

This guy that I used to work with gave me this stuff called Bourbon Bacon Marmalade. This stuff is awesome on burgers or even just on toast.

I never got the recipe from him but a search just yielded this: http://foodiesathome.com/2010/12/bourbon-bacon-marmalade/

More bacon goodness, filet mignon in jalapenos wrapped in bacon.  It solves the problem of the filets being tender but flavorless and it is wrapped in bacon.

Paulie Gee's has a great pie with Bacon Marmalade. I think the guy who was making it closed up shop and went to Spain. Maybe he makes it himself now.

That recipe looks somewhat similar to how I remember it tasting - maybe not the bourbon - but that might be good.

Craig,

You will perhaps find this supportive of your thesis on bacon: http://www.vibe.com/article/105-year-old-bacon-woman-says-her-secret-long-life.

Believe it or not? Or is it just a hardy ol' Texas gal?
