Cheese - Low, Medium or High melting point.

Hi,

What does melting point mean please?

I am opening a business and will want my pizzas to be made fast but correctly.  Should I use Low, Medium or high melting point cheese?

The way I am going to make my pizzas, as I have been told this way makes the best is, by putting the cheese on last.

Certain styles of pizza dictate that cheese goes on last, Greek/pan comes to mind, however that method would be entirely wrong for a New York style and many other styles for that matter. Cheese last can create excess moisture problems or lack of proper baking for certain toppings. What style do you plan on using? Try it both ways and see which you and your taste testers think.

I will do some testers. 

I would like to make pizza either with a Medium thick base and thin New York style bases.
