Congratulations!  I've wanted one for a few years, but I just did not have the right layout outside for it and I would have to do a remodeling of our deck in order to have a convenient place on firm ground. 

Please keep posting photos and if possible I'd like to see how it fits into your outdoor landscaping.

I will keep posting pictures as Tom sends them to me.  Outdoor landscaping in South Texas during a drought is virtually non-existant.  I am parking it on the back porch until a sufficient man-cave is built.  Thanks for the congrats.

I had the great pleasure of meeting Tom this past weekend. (While he was divered)  We squared up a few details about the oven, shot the bull,  and enjoyed some (several) well, actually lots of cold drinks.  He is a very kind soft spoken kind of person.  We had a blast.

I brought several beers, but the only two I specifically wanted to try together were Shiner Ruby Red and the Margarita, and the Real Ale Rio Blanco Pale Ale for the Mushroom pie.

Gene, after puzzling out Craig's oven and talking to Bill about some plans he purchased, I think this is how Craig's is built and is able to withstand the thrust of such a flat dome, and it also explains the odd way his first course is positioned (it is not a soldier course, it is called a sailor course when it is laid vertically, wide side out).

Tom would you pour the refractory, lay the sailor inside of that and then build the dome? -or- in some other order?
That 15" measurement really has me turned on. ;D
I guess the dome butts up against the sailor course?

No, you would lay the sailor, then form the outside and place the concrete. You want 100% contact and bond at that point.  The dome rests against the trimmed sailor.

I am still debating, but I think it would work better, and after using Craig's, the door height doesn't bother me anymore (9x17).

What is your plan for thermal expansion Tom?  I used a very similar method on my build and thermal expansion destroyed the stucco in no time.  This past weekend I ripped it all apart down to the brick and wrapped it with a layer of ceramic fiber(which I hate using due to health concerns).  Now I've got to redo the outer layers and Get her tiled and done.

Also, I do not think Acunto or any other Neapolitan oven maker use any major structural form of buttress.  I've seen pretty in depth Acunto build photos in the past that don't so it.  I can't find them now but did find some that seem to support my claim.

And here you see a picture where that form appears to have been filled.  The material behind the sailor course looks to be the same insulating mix used to cover the rest of the oven as detailed in the pictures I can't currently find

Yes, I agree that is the way they do it, but also after observing Craig's oven I came to several other conclusions.  First, the material they use for insulating is not nearly as good as perlite (the oven was too hot to touch on Sunday), but it is much more dense, they use the insulating material AS the buttress along with the exterior layer of stucco which by my estimation is a good inch (thump test), and is not reinforced by wire (looking in the cracks of the stucco).

That is why I planned to use a belt of refractory concrete (non insulating).  With the brick sailored, it will maintain the planned 4-1/2" of thermal mass, and will NOT rely on the insulation/stucco as a buttress.


How did you apply the perlcrete?
