I'm not sure if it's adequate for pizzamaking needs, but it's exciting to me that there is a locally grown, locally milled flour available again.

Hmm... checked with the miller, and they say the 00-grind comes in around 9% protein content.  Not sure it'll be useful for a lot of pizzamaking, but it'd probably make a nice pastry flour.  I picked up a small bad and will try to do something with it this weekend.
