It might help if you identify the type and brand and model of the conveyor oven you have in mind.
Also, in parallel with your post here, you might want to register with the PMQ Think Tank (if you haven't already done so) and post your questions there. It is mostly professional pizza operators who visit the PMQTT and many have conveyor ovens and are quite likely to be able to answer your questions.
