Need help identifying this crust...

Hi!

I'm trying to duplicate a specific kind of crust and need a little help from the experts...

Basically, the crust I'm looking to make is a thin, flaky, crispy (allegedly Chicago Style) crust, either dusted with or containing cornmeal (not sure).

Basically it's a crust similar to a pizza chain that used to be (at least) in the Denver area called Windy City Pizza.. Not sure how authentic it was, as I've never been to the Windy City, but the pizza was excellent!  There is a  pizza place in Seatttle (Delfinos) with a very similar crust.. Actually, I think I even remember reading once that they even bought their oven off an old Windy City franchise...

Anyway, I found this post with a number of recipes for different Chicago style pizzas (http://www.pizzamaking.com/forum/index.php/topic,16422.0.html), but since I'm unfamiliar with any of the restaurants, not 100% sure the best place to start looking... Any suggestions?

Hey buceriasdon!

Thanks for the link!  I actually looked at this one a bit earlier; and I think this is the one I'm going to try first..

The only thing; it sounds like from the description that this is more of a chewy crust instead on the more flaky crust I'm looking for..

Anyway, headed to the store today to pick up supplies!
