Pizza Fans,

I'd like to try some better flours than what's available at local grocery stores.  Does anyone know of any flour suppliers in the Waco area?  A place that sells small quantities to the general public would be preferred.  I'm not ready to buy a 50lb bag of anything.

I'm also open to suggestions on which flours to try.  I'll probably be trying out mostly NY style recipes.  After reading the pros and cons I'm hesitant to try bromated flour.

I've been using King Arthur bread flour from HEB.  I think that's about the best they have to offer.

You can make a fine pie with KABF. Personally, I prefer KAAP, but I like my pizza on the more tender side. I couldn't tell you a place to get a better flour in Houston let alone Waco. You can buy just about any kind of flour on-line, but it gets stupidly expensive.

My suggestion would be to stick with KABF until you are positive you can't make a better pie. I think you will be surprised just how good you can get with it. Your oven is probably a much bigger limiting factor than your flour.
