Chicago Bob got Shakey

Sorta boring round here so I thought I'd give our fearless leader's " Steve's Shakey's Style " a test drive.  Super easy pizza, folks....drove like a dream and brought a 'lil memory tear to my eye! Good 'ol Shakey's taste indeed......

Growing up in Cedar Rapids, IA.  At The Flamingo, Italian Sausage, Mushroom and Green Olive.  Cracker crust of course.

she's a beaut, bob! i always stick to one style pizza (at least till i get it where i want to be), but this has got me thinking about expanding my horizons a bit!

mykall, thanks friend. Sauce was a traditional Shakey's paint brush style thick puree with minimal ingredients so's to not get in the way. I added s&p an a 'lil crushed oregano & pepper flakes....das it.  ;)   Oh, an I'm a sauce-a-holic....mucho-mucho amigo.....

Awhile back here I did some cry'in bout how back in the day (early 70's) we never par-baked nuth'in an I'm not gonna do it now, whaa, whaaa. Doofussly, I was not realizing that I am not now cook'in with a Blodgett deck oven!  ;D And these thick hard anodized pans from Chicago Mettalic in a home oven just ain't gonna take ya where ya wanna go.....
Enter obscure strange looking 16in. pan hiding in bottom of misc. drawer. It's surface is small 1/4x1/4in. raised 'lil squares an around each square is pin head sized holes...it gets the job done without par baking the skin.
Still a 'lil bit of gum but I've also argued (I mean discussed) that before. It is nearly impossible to avoid, everyone had it back in the day, so it don't offend me. As I'm sure you probably know, John(fazzari) has addressed this issue and obtained some good results as far as eliminating gun layer.
