After trying several brands of canned tomatoes I have settle on the prime ingredient in my pizza sauce. I make mostly New York Style. I have broken what seems a cardinal rule of sauce. I am not using Whole tomatoes. Instead I used Passata (or strained tomatoes).
The product I have settled on is:

The listed ingredients: Organic Strained Tomatoes, Sea Salt.
This product is packaged in a GLASS jar which greatly improves the flavor. This product offers convenience with a fantastic taste. I like to restrain though a very fine mesh sieve, which removes about a 3rd of the liquid. The "juice" is sooooo good, I just drink it. (with canned tomatoes I just toss the juice or put it in soup.) Also, this product contains NO citric acid, which I think creates a kind of "off flavor".
To finish the sauce I grind some dried oregano in a coffee/spice mill and add to restrained passata. That is it, I add no salt or any other ingredient, and it is by far my best sauce.
The package I buy comes in a tall slender jar Net Wt. 24 oz (680g). This is enough for 2-3 14" pizzas.
